Faux Greek

Thanks to my daughter's interest in culinary arts and her working to build a career as a cook / chef / kitchen manager, I don't do a lot of cooking anymore.  I never was much of a cook. Sure, I learned a thing or two from my mom and grand-mom, could certainly follow a recipe, and was able to do a bit of improvising to come up with a "special" dish.

One such dish was a take on chicken cacciatore.

My take was basically seared chicken thighs with onions, garlic, and canned tomato sauce that I spiced with hot or barbeque sauce. It was spooned over rice. Nothing fancy but the kids loved it. And because it was easy and fast (my two "what's for dinner?" rules) it appeared often.

Over the years I was able to create "faux" takes on a number of fancier fare. They weren't the real deal but were tasty enough to pass muster and please the target audience. I was also able to learn how to prepare and perfect (for my family) cultural staples; macaroni and cheese, cornbread stuffing, greens, and candied yams over the years.

Still, I considered myself a so-so cook.

Some weeks ago my daughter brought home some of what she'd prepared at the nursing home.  She described the dish as, "a kind of Greek" chicken which is from here on out shall be dubbed, Faux Greek Chicken.

My daughter is a much better cook than I am; much better than I ever was, better than I will ever be.

Mostly because she loves it (I never did) and because she has patience and is excited to learn more.

I do, however, enjoy tasting her creations and will occasionally serve as her sous.

It is all good.

Junio

We are six days into this new month and I've already lost a day.  All day Thursday I was operating under the premise that is was only Wednesday.  This, in and of itself, wasn't an epic proportion tragedy. It has presented more like an annoyance that the work stuff (tasks I set up to get stuff done in accordance to pre-determined schedules and deadlines) was now off which undoubtedly impact the off-the-clock task list and schedule.

Otherwise, June has gone as expected; it has been hot, noisy (thanks to Memorial Day fireworks, motorcycles, bikes, four-wheelers, blaring car stereos, and of course, kids playing) and reflective.

The half-year mark is kind of a natural point of looking back as well as looking forward.  Looking back, goals established at the beginning of the year have not been fully met. Some daily goal benchmarks were met but clearly not consistently or urgently enough as the expected results are missing.

So, looking forward: Reset.

The plan, I believe, was a good plan, but I need to be more consistent and approach each day with a bit more urgency toward reaching and achieving.

Cheers to June.  Here's to the days and weeks ahead.

One Year in Three Weeks

My new favorite candy is Giant Reese's Peanut Butter Cups stuffed with pretzels.   I have only had one and given my new life goals, one is all I'll have for some time to come but I thought that you should know that I have a new favorite.

However, I have not yet tasted the Mocha Chocolate KitKats.  On the face of it, that candy stands an excellent chance of becoming my favorite. But, again, given my new life goals I likely will not know for some time the potential of Mocha Chocolate KitKats moving into the favored role.  And again, I thought that you should know.

Oh, by the way, new life goals are really old life goals that took a hiatus and are now back front and center.  You all probably know the drill, labs came back indicating yada x3, medical professionals advises certain actions and changes yada x3 and so the journey is re-booted and continues.  These last few weeks have been a trial to say the least.  The net results however, positive.

Onward. Forward.

I am sure you've notice I haven't spoken of THE events of the last few weeks / days.  Some made me extremely angry and anxious while others made me extremely happy and hopeful.

The End of October!?! November First

Something bit me.  This something either bit me twice or two somethings bit me in pretty much the

same area; the back of my neck about 4 fingers from my right ear.

I started this post some days ago (the 27th of October to be precise) and have since decided to take the post in a different direction while also deciding to leave the beginning. I won't leave you hanging thought, the bites on my neck are completely healed. Suffice to say, at the time the wounds were troubling enough to warrant mention, let alone a blog post.

I had  a dream about one of my maternal aunts the other night.  She was the third oldest of my mom's 5 female siblings during my childhood / life.  Her death preceded my mother's by at least a decade but she was very prevalent in our lives during her life.  My mom was one of her primary caregivers during her decline; of all my cousins I am closet to her daughters.

In the dream my aunt was alive in my present day but as if she hadn't aged since the 80s. The imagery and conversations were so jarring that I have worked to push the little bits that I did remember out of my mind. With the exception a singular event; the fish fry. Her fish fries were events of family lore. These memories I hold dear and don't mind their creeping into even creepy dreams.

And Now This Really IS Twenty Twenty

Greetings and Salutations,

And just like that twenty days of twenty twenty are just about over and out.  Are we all still on the eating better, drinking more water, exercising more party bus? For the record, I am, despite the cheese puffs I'm eating right now.

I assure you, this cheese puff eating is an aberration, not a rule of the past twenty days.

But I don't want to talk about what I'm eating or not eating or drinking.

One of my maternal aunts celebrates her 100th birthday next month! Her kids, grands, and great-grands are hosting an event to mark the occasion.  I plan to be there ringing in her new year.  My Aunt (the eldest of my mom's siblings) always possessed an Alaska sized personality; most of her kids, grands, and great-grands share that trait.

It should be quite the party. It shall be the one good thing about February, a good memory to hopefully over-shadow the other.

(Also for the record, still sketching daily, participating in a challenge--squee!)
(Also also for the record, I have not cut my hair.) Squee.

And the Winner Is

Some weeks ago I made an off-hand suggestion that daughter and I attend the 3rd annual Mac and Cheese Fest as it had been some time since we'd had one of our mother-daughter (good friends) outings. The $65.00 per ticket price knocked the possibility out of contention. And then, a couple of weeks ago, daughter mentions, not so off-handedly that her employer was going to participate in the festival, that we could get a deep discount on the tickets, and asked if I (still) wanted to go. For The Win.

We, along with hundreds of other visitors tasted offerings from caterers, restaurants, culinary institutes, and the like. We were asked for vote for our favorite/s. After the votes were tallied, the winner: Autumn Asiago Mac and Cheese (as pictured above) was announced.

.
Chef Lex (in the white coat, here with her wife, Lindsey) and the team took the first runner up trophy from 2015. And this year, For. The. Win. bringing home the coveted Golden Noodle. Yay Team.

My daughter's words: It's funny how life works out. I had a job offer to leave Chicago and then I got the offer from Amazing Edibles and after being with them from Late spring I grew with them, and I didn't just like my job I loved my job. And making decisions is apart of life but this choice to stay and working with Amazing Edibles has been hands down my best choice since deciding to pursue culinary. I wish everyone could have a supportive, knowledgeable, loving, caring work environment. I'm so happy they chose me and I chose them back! Thank you ladies for always dealing with this silly Dani even at 6am!

Congratulations to an incredible team who contribute to make Amazing Edibles amazing.  FTW.

More Monday!

May We Go All The Way

No cook, mason jar oatmeal.

Four years ago I had a girlfriend. Weird to be saying girlfriend in my mid-fifties, (well, I wasn't mid at the time) but still . . .   that's what we were, girlfriends. And April per FB memories was our signature month. She shared and spoke with me much four years ago April  Not to long beyond April she stopped talking and eventually, broke up with me. But, I am veering off track. The track being: healthy eating. My good friend over at 8th Day proposes a community challenge of small changes to daily eating that will hopefully lead to lasting changes toward eating healthily.

Some of the small changes referenced in the post  are changes that I'd already adopted on some level but I have not been consistent to the discipline. Thus, I am joining the challenge. One of my hurdles is having healthier options readily available. Which brings me back to the girlfriend.

Four years ago she shared a no cook, mason jar oatmeal recipes link.I bookmarked the link but had not ever gotten around to trying any of the recipes. Then, we broke up, life took a turn toward death, grief, unemployment, and . . . well, suffice to say, I forgot all about living healthily let alone, no cook mason jar oatmeal.

If not for the "On This Day" FB feature no cook, mason jar oatmeal would have remained forgotten. Now, however, I am anxious to pick up the supplies and ingredients needed to make several days worth. I am already doing smoothies a couple of days a week, oatmeal in a more traditional serving method for a couple others. Breakfast done healthier is rolling along fairly well. The no cook, mason jar oatmeal will help mightily.

Lunch and Dinner need much more work. In preparation of the challenge, my grocery list included more fruit and vegetables. My week one challenge is to include at least one vegetable with both lunch and dinner this week.

In addition to taking on the May Healthier Eating Challenge, May is also National Bike Month. My hope is

that weather permitting Melody and I are rolling more and more hours this month. April has been dismally wet and cold. Not at all conducive to Melody trips. Here's to taking a lasting turn toward sustainable lifestyle changes and healthier living. Thank you to FB for prompting a memory. Though the relationship ran aground, I am happy for having had the experience. I remember much of our time together fondly, now.

Older. New Thing.

Yesterday was my daughter's thirtieth birthday.  The thirty days leading into her birth date has been a journey down memory lane, much of which was shared in this space and to my FB circle. From this day forward I am the parent of two "kids" in their thirties.

And so today, I had flour-less pancakes; banana and eggs. Hmmm...  I think tomorrow I shall try it with cinnamon.

Two and a Half

MicroBlogMonday
As I remain challenged to stitch together much in the way of coherence please indulge a thimble full of random thoughts:

1. The work (of more import, commute) week is shortened by two and a half days.To that I scream a resounding YaY!!  Well, the commutes will still be three full days as I must return even after the half day of work. But, still . . yay.

2. You shall be pleased to read that after much hand wringing and hair pulling, I have finally decided my contribution to the eve breakfast potluck: deviled eggs.

3. A joyous noise moment: the company holiday party won't happen until the ninth of January. It shall be a casual, family affair. In a bowling alley. To that I scream a resounding YaY!!!

4. The pooch (don't worry, she has since had her face done, eyes no longer hiding behind all that fur) and the catdog, Buttah continue to  navigate a, "I'm the favorite" course.  Neither need not worry. Plenty of love for them both (as well as for the more aloof, Pete.)

5. A condolence card arrived the other day which confounded
and astounded in equal measure. Quite moved by the outpouring of kindness expressed therein.

6. Birds are a common theme in greeting cards. Birds are a common holiday theme. My comfort threshold with birds is low. Not so low that I'm overly quacked out by images alone. But should I come face to face with a gaggle of geese, a covey of partridges,  a murder of crows, and so on . . way quacked out. Still, I shall be looking for every and all opportunities to shrink the bird themed greeting card collection currently in my possession.

Second Saturday AM

Today's entry was to have been about getting (and keeping,  mis-stepping and now needing to regain) Cinnamon's sleeping through the night schedule for in the last couple of days she's back to rousing at 3:30 AM for walking, feeding. . . . aaarraggghh.

But, that will have to wait for another day, for on this day,  there is a dream to relate.

We're up at 3:30 AM. We walked. She ate. I drank the coffee the actor had brewed, up early to prepare for his coaching gig and an audition. We talked (the actor and I) about a great number of things while Cinnamon harassed the orange cat and ripped apart a carton (when she couldn't get at the cat).

A couple or so hours later the actor had to shower and dress for his day. After he left I went back to bed, to re-boot my Saturday morning. Sometime after I dropped back off to slumber-land, a dream crept up beside me.

As you know, of maybe YOU don't, but some do--I don't remember dreams, or at least not the full scope of them. Just snippets. Slices.

This dream starred Kobe (as in Bryant, as in, ick, I can't stand him). He was the waiter and I the diner. I  was having a dinner or it could have been a series of dinners with someone whose identity was never revealed. Kobe kept bringing me dishes I didn't seem to be ordering. First, fish. Then, linguine. Then, some kind of sandwich. And then . . well, it went on and on.

With the delivery of each dish Kobe would moan and groan. He had some whiny commentary about my eating and he and his team losing. There appeared to be a correlation. The final dish (that I remember) him plopping down in front of me was an extremely large mound of french fries and a saucer full of fried pickle slices. The End (of the dream).

And then, screaming bladder.

I know why the food, as the last of the great many things the actor and I discussed before my morning nap was diners and the virtues (and / or risks) of  high, middle, and lower end dining establishments and experiences. I don't know why the specific food items except for the fried pickle slices. Their appearance is undoubtedly the result of my first former girlfriend being heavy on my mind in recent weeks.

Kobe's whiny ass?  What? Why? And Stop!

And now, onward to a re-booted Saturday AM. Cinnamon and I have been outside again. Soon she will get a bath where I will attempt to clip more hair from around her face so it is in better alignment with her body, the litter boxes will get cleaned, and . . . well, a number of other chores before going out tonight.

But first, breakfast.

Snack Packing

A few weeks ago I tried my very first friend Twinkie. It wasn't horrible but it also wasn't a taste sensation I had any desire to re-visit.

And now with the news that Hostess is asking the bankruptcy court to liquidate, Twinkies (and other Hostess brands) being snapped off store shelves, it isn't likely I'll get my hands on the little spongy cake.

And while I'd rather not have the fried Twinkie exploration be my last Twinkie memory, I am not about to get into a bidding war for a box of cakes. Seriously? Hundreds of dollars for a box of mass produced snack cakes?

People are weird.

Prior to a few weeks ago (and the fried Twinkie exploration) I hadn't had a Twinkie in . . . I can't even remember when. I remember having them in my lunch bag on occasion, I remember packing them in my kids lunch boxes every now and then.

Truth be told, Twinkies weren't even in the top 5 of Hostess brand snack packing.

ME:                                THE ACTOR:                THE DAUGHTER:
Suzy-Q                            Apple Pie                       Honeybuns*
Ding Dongs                     Honeybuns*                    Cupcakes
Ho Hos                            Nutty Bars*                    Apple Pie
Cupcakes
Sno Ball Cakes

*Little Debbie Brands

I feel awful that so many workers will lose their jobs due to (by most accounts I've read) bad management. I feel awful that while some of the brands may indeed live on (someday--as the food conglomerates scramble to snap up the more popular snacks) the Hostess bakers likely won't get their jobs back--or at least not anytime soon.

A cursory look-see was executed during Saturday's grocery trip and as I suspected not a Twinkie, Ho Ho, Ding Dong, or Suzy-Q to be found. A similar act will be conducted on my "last minute" shopping excursion sometime over the next couple of days.  I'm not holding on to any hope of finding any of the more popular cakes, especially Twinkies which seem to have grabbed the nation, if not the world, as some sort of beacon to all snack cakes everywhere.

If the fried Twinkie is my last Twinkie experience, then so be it. I'm sure the pumpkin cheesecake on tap for one of Thursday's desserts will serve as a more than adequate Twinkie memory dasher.

Too Much To Ask?

Dear producers of Progresso™ soup,

Let me preface by saying I am not a vegetarian and I don't generally eat your soups. Yes, I have tried a variety or two here and there over the last several years and found those offerings to be head and shoulders above your competition on the flavor scale. But with few exceptions (namely, canned tomatoes) I don't consume canned foods generally and canned soups, specifically.

Nothing personal. While your soups are tastier than most, for me, homemade truly is best for overall flavor satisfaction and value.

That being said, a vegetarian friend recently lamented over the fact of meat based broths in your vegetable soups. She queries, "Is it too much to ask . . . ?"  Her query prompted me to go to your website, which is quite informative, by the way, to see what I could see. My initial thought was perhaps my friend had checked the label of only one (or perhaps two) varieties, that surely there must be vegetable based vegetable soups for vegetarian consumers.

I must admit to being a bit surprised and more than a bit unsettled to find that of the many varieties of vegetable soup offerings, all but one boasts either a beef or chicken based broth. The minuscule variety available to vegetarians is. in a word, appalling.

And so, I join her in asking, "Is it too much to ask not to have meat based broths for vegetable soups?" Or at least, equal representation.

Standing in solidarity with the vegetarian canned soup consuming general public.

Kindest Regards,

Middle Girl

Weekender

1. Thank you dear friend for the bottle. Buttah insisted on being in the shot.
2. Bike riding happened (beginning Thursday). And it was fun.
3. My mom had not (until Saturday) ever tasted avocado (or mango).
4. Avocado = fail. She didn't hate it but didn't like it enough to try to improve the taste (for her palate) with any additions; salt, pepper, tomato. etc.  One and done.
5. The mango on the other hand was quite successful.
6. Daughter went to the funeral of a former classmate. He was 31 days older than she. She has made plans for her 27th birthday. He didn't survive to see his 27th birthday.
7. THAT has weighed heavily on her mind as well as mine.
8. Back to mom, she continues to take issue with my closely cropped hair. She feels I'm 'dissing' the struggle (from when I was an infant/toddler with eczema) she faced 'saving my hair'.
9. When I saw her Saturday AM my hair was (in my estimation) too long. By Saturday evening, no longer was it too long, it was just right (in my estimation).
10. I wanted to put together a cucumber salad for my lunch(es) this week and likely still will but pretty perturbed that I couldn't find Kalamata olives at the store.
11. Bike riding will happen in the early morning hours (before work) at least three days this week.
12. Despite the emotions mixed with some procrastination the entire list of weekend (to-dos) gone themselves done. Well, almost. The folder containing the work I was going to do from home somehow got itself forgotten at the office.

To paraphrase "Feeling Good" it's a new day, a new day, and I'm feeling . . .

Ok to eat, but otherwise, ICK

I can't begin to tell you what seeing a clump of mushrooms popping up out of the earth does to my skin. Even now, I can't even look at this picture without feeling the creepy crawlies all over my body. It doesn't take much, especially these days, to send me into a cat scratch fever meltdown and clumps of mushrooms are just the ticket to send me over the edge.

And wouldn't you know it 'shrooms had popped up all over the neighborhood and seemed to be everywhere I turned this weekend. Even in my own yard slash wannabe garden, which had to be eradicated immediately in spite of the squeamishness.

As a young girl I remember . . .

sorry, this post cut short by the ick factor.

Never Say Never

. . . or another week of random stuff. It's like needing to clean the closet, you can't move on until the underused, no longer fitting, the "what the heck was I thinking?" are purged from your cramped space.

My head feels like a cramped closet. Thus . . .

The actor's current show is entering the final weekend. I was saw the show this past Thursday and again on Sunday. Sunday made three. The Irving Berlin penned, "Blue Skies" is woven into the story line and as a result the song (and overall theme) has been looping.

Blue skies, smiling at me, nothing but blue skies, do I see Not surprising to have learned of the many, many recorded versions of this song. And even less surprising, that in spite of the happy, tappy message of the song and the looping I'm feeling the other blue that is to say, blah and bummed.

A cousin lost his battle with cancer last week. His "home going celebration" was today. And while he was ill for quite some time and his death expected, the reality and witness to the finality, was (again) daunting and yes, sad. Still, there are happy memories embedded in our history and I will recall and recount those, down the road a bit. But, what I take away from the services is his beautiful smile and how he touched so many people in a very positive way.

In other news my daughter started her extern-ship today. She's training to become a Pharmacy Technician and while she was all knotted up with nerves this morning, she donned her professional clothing and lab coat and set off to conquer the world! The first day was a winner and she returned home with a brush of confidence that she can, "do this!" One day, one step but YaY for starting on an UP note.

And finally, pickles. An email alerting me to a comment posted to an old blog post had me thinking about pickles in all the incarnations. I read the comments and among them, my 'not on a bet' comment re: fried pickles. That was March 2007. And while rooting around the archives, I spied another post where I talk about (among other things) fried pickles at Toots. I don't think there was a bet involved, but certainly some influence was asserted to get me to try them. And as it happens, I couldn't get enough of them.

A friend and I talked about about things we might or might not do and while we were reluctant to say, "I'd never" we were pretty clear about certain likelihoods and the phrase, being in love . . . bracketed a few statements on how that state may change what we may or may not ordinarily do. Of course there are factors other than love, but at that (and this) moment in time, I'm looping (among other songs) N. Cole's "Nothing Stronger Than Love".

This or That: Cookie Candy Bar

Now and again there is a craving. The craving usually centers itself around candy. The candy is almost always chocolate and almost always with nuts, like whatchamacallit ™ Likely, something that can be picked up in a rush, impulsively.

Now and again there is a craving centering itself around cookies. More often than not the cookies are chocolate, with chips and sometimes, nuts. White chocolate, macadamia. Yum.

Not often, but at times a cookie candy-like combo craving is on the menu. And the cookie-candy-like option chosen most of those times is Twix ™ over Kit-Kat ™ especially the peanut butter or the java options.

In the spirit of full disclosure, I find it hard to resist chocolate in the form of candy, cookies or any combo there-of, which is why said products hardly ever appear on my grocery lists or are residing on a shelf, in a cupboard. For, the fact of the matter is, if I had them, I'd eat them. No craving required.

This or That: Peanut Butter

What is your preference, smooth or chunky?
On a slice of wheat or oat bread, topped with either cinnamon or bananas (or both). Paired with a cup of skim or the newly favored almond milk . . .
What is your preference, smooth or chunky?
**note: product shown not necessarily an endorsement, though it is one of the brands currently in my cupboard.

Acting Like . . . Friday

Whew, finally. Friday.

Rising early (thanks to Buttah the chest sitter and Peter the poker) to get down to the workplace neighborhood to have breakfast with a friend*
before checking in to work for the day, was a real treat.

We were sooo into our girl time, that time flew right by. It was nearly 9:30 and we were nearly an hour late for work. Oh. Goodness. Thankfully, the breakfast spot was only a few feet from the job spot.

A fun twist was seeing how affected the boys were with our absence especially when the dots were connected and the realization struck that we'd had breakfast together.

It was a great start to this Friday; this tail end of an incredibly long, tedious, filled with anxiety and trepidation week. I only wish we'd thought to do this sooner. But, the tradition has now begun. It won't be every Friday, or maybe not Friday at all, but again, and again, and again . . . is the hope plan.

And if the boys can't deal? Oh, well.

*NR...my thoughts are with you.

What The Hell IS Snicker™ Salad?

Of the definitions I found for salad this one fills the bill, a usually incongruous mixture: hodgepodge for Snicker™ Salad, most. When I first heard mention of the concoction in question I had a similar reaction, WTH?

But yes, there is such a thing as Snicker ™ Salad and from my recent (and very brief) research this salad would be of the dessert variety, of course. Also, from my research there are a number of variations most including some combination of vanilla pudding, apples, grapes, Cool Whip&0153; and Snicker&0153; bars broken into bite size pieces.

Some folks nix the Cool Whip&0153: and some, the pudding but the basic premis is the same. What the hell is a Snicker™ Salad? It is basically a fruit salad with a pudding-(like) base, and a Snicker™ kicker and is quite simply, divine.

I shall resist making my own batch for as long as I possibly can, which probably won't be very long at all.

Just Some Thoughts

I'm trying, really, I am. Or not. But, I am, a little. The dating. On-Line. Yes, I'm trying. Still. Kinda. Sorta. Really, I don't want to date (I don't think) so much as to meet someone or a couple of someones to "hang out" with, after some time conversing, of course. But, I can't seem to get past the profiles. And pictures. Of dogs. No, not figuratively. I mean literally, pictures of dogs. As the profile pic. To meet . . . people. I think.

Anyhoo. . . . speaking of dogs, to be specific, hot dogs. I don't eat hot dogs all that often. But, now and again a good Chicago Style Dog is just the ticket. And since a new place opened in the neighborhood AND there was a coupon, well, no time like the present.

The new sandwich place (that of the arm waving man dressed like a hot dog) features beef, pork, turkey, and chicken products serves something called a Chicago Style Pretzel Dog. Which is just a hot dog with the classic toppings (tomatoes, onions, relish, mustard, sport peppers, celery salt, and pickles) on a pretzel roll (which takes it out of the Chicago Style realm, as that roll is poppy seed). Intriguing if you're in to that sort of thing, which I am, from time to time and the time was today.

Whatever hopes I had were dashed as soon as I discovered:
1. it wasn't a footlong hot dog sandwiched between all that bread, but two regular sized dogs fighting for space among the gigantic tomato wedges and other toppings.
2. it was slathered with mustard. Now, I like mustard on my dogs but there was GOMPERS of mustard on this thing!
3. the worst technical error in the history of hot dog serving technical errors. The damn dog(s) were C-O-L-D.

Now, I'll forgive that they don't seem to have a grill or a proper steamer (they should get out of the hot dog biz immediately if they don't intend to acquire one or the other, or BOTH) but to pull these limp tubes of meat product out of a vat of c-o-l-d water is just w-r-o-n-g! Wrong. Wrong. Wrong. Unfortunately, I didn't know the water (& the dogs) were cold until I got home, taken off shoes, one of the two pairs of socks, pants, and 3 of the 4 top layers. So no, there was no going back out.

I did taste the sandwich I picked up for D (an Italian Beef--except with turkey) dipped, and topped with peppers and it was ok. I don't think I'll be replacing my fave Italian beef with this turkey version, but it wasn't bad. It was hot which was a major plus over the dogs.

The fries were good. Not great, but ok. And the toppings were fresh.

I have to give the new sandwich place a C for the first round. It may be awhile before round two (if they last that long). When or If, I definitely won't be ordering a hot dog.

Now, must go watch O*rah talk it out with B. Walt*rs.
